Quick Chocolate Chip Cookies ( and batch for the freezer)


RECIPE – chocolate chip cookies
Makes an instant batch (12) and freezer batch too!
50g soft brown sugar
50g caster sugar (vanilla sugar best)
125g butter I use salted ( most recipes desire unsalted)
1 egg lightly whisked
1 tsp vanilla paste
1/2 tsp salt ( if using unsalted butter)
225g Self Raising Flour
200g chocolate drops ( I use callebaut 54% minimum)

Baking sheet and greaseproof
Mixer ( or bowl and spoon!)
Fork or whisk for the egg
Cling film

How to
Mix the butter and sugar together
I personally mix for about 5 minutes you get a better cookie

(You can if you can’t wait and really do want a super fast cookie put all ingredients together and mix )

Add the egg , flour and chocolate and mix ( remember to scrape the sides and bottom of the mixer bowl if using to blend thoroughly
Split mixture into to 2 portions
With half the mixture make 12 cookies
Place on baking sheet with greaseproof about 1/2cm apart so they can spread a little
Put in the oven and bake for 10 minutes
With the remaining half
Put cling film out and place mixture on , roll into a sausage shape and pop in freezer for instant cookies whenever you want – just slice when you need and bake
