PIZZA DOUGH Recipe – Make it your own

Ive tried lots of dough recipes but this one works best for a nice crispy base ( not a lover of deep pan/dish bases but the dough here is light and springy so would work well too)

PIZZA DOUGH

  • 200g plain strong white bread flour
  • 200g 00 flour
  • 30g semolina flour
  • 30ml hot/ tepid water
  • 3 teaspoons of dried yeast ( if fresh use 60g)
  • Salt
  • 4tsp good quality olive oil

1. Turn on oven to highest temperature
Put your dried yeast in the water and allow to sit and foam for 10-15 mins) (if fresh just crumble into your flour

2. Mix the flours, salt together in a bowl when yeast is ready pour into flour add the olive oil too and mix into a dough , add extra water if required

3. Sprinkle semolina on your work top and knead the dough for about 10 minutes should go from sticky to smooth and take any dough you might have on your hands off ( clean hands after making dough beans kneaded well!)

4. Put a little olive oil into bottom of the bowl place dough on too
Cover with cling film and allow to rise for 30 minutes

5. Cut into 4 push out from centre to edge to create the shape you desire oblong or round traditional

6. Add your sauce And toppings

Cook in the oven for 15 mins until crispy

Any spare dough sprinkle with semolina and pop into a plastic bag, store in the fridge for 3/4 days
use as needed

PIZZA TOPPING
The world is your oyster ( never understood that really!) anyway whatever you have of fancy goes on a pizza crust sweet or savoury

I use ludo sauce ( check https://homeofrealfood.com/recipes-3/ludo-tomato-sauce/ for recipe )

Or a fresh pesto,
Or just crushed tomatoes and garlic
Or no tomato base

I used the leftover BBQ chicken from last nights birthday dinner too but you choose your favourites a cracked fresh egg is always great as the soft yolk will create a great sauce topping too
